Gringo Enchiladas
Beef and Cheese Enchiladas

One of our favorite monthly meal rotations since we started dating and cooking together is David’s Beef and Cheese Enchiladas. Early on, when Edward first had them, he jokingly called them “Gringo Enchiladas!” But these are indeed delicious and we have the full recipe on our blog for you today!

Ingredients
  • 1 T butter
  • 1 lb ground beef
  • 1 yellow onion, chopped
  • 3 T taco seasoning
  • 2/3 c water
  • 1/2 lb shredded cheddar cheese
  • 8-10 fajita tortillas
  • 1 can red enchilada sauce
Tools
  • Large cutting board or butcher block
  • Chef’s knife
  • 12″ skillet
  • Serving spoon
  • 9″ x 13″ baking dish
  1. Preheat oven to 375° F.
  2. On medium heat, melt butter and sauté onion until soft and translucent. Add ground beef and brown. Drain and return to pan.
  3. Add taco seasoning and water. Simmer for 5 minutes on low. Remove from heat.
  4. Sprinkle a pinch of cheese on each tortilla. Add a spoonful of ground beef. Roll tightly.
  5. Place rolled tortilla into greased 9×13 baking dish. Repeat steps 4 & 5 until the dish is filled.
  6. Pour red sauce over the tortillas along with the remaining shredded cheese.
  7. Bake for 20 minutes.
  8. Enjoy with rice and beans!

  1. Typically we use Frontera sauces, but this time we used Old El Paso, and it was phenomenal!
