Cinnamon Roll King Cake

Mardi Gras is just days away, and we couldn’t be more excited to share one of our favorites going into the weekend. It’s said that those who find the plastic baby will have good luck the following year. Laissez les bon temps rouler!

Ingredients
Cinnamon Roll Cake Ring
  • 2 packages of refrigerated cinnamon rolls
  • 6 T melted butter
  • 2 t cinnamon
  • 1/4 c brown sugar
  • Bundt pan

Ricotta Buttercream Frosting
  • 1/2 c ricotta cheese at room temperature
  • 3 T unsalted butter, softened
  • 2-1/4 c powdered sugar
  • ¼ t vanilla extract
  • Pinch of grated orange zest
  • Pinch of salt
  • Electric mixer

How to make it
Cinnamon Roll Cake Ring
  1. Preheat oven to 350° F.
  2. Open tubes of cinnamon rolls. Save included frosting packets in a bag or container and place them in the refrigerator or freezer for future use.
  3. Stir together cinnamon and brown sugar. Pour melted butter into the pan and rotate to get into all the nooks and crannies. Sprinkle the cinnamon sugar into the bottom of the pan.
  4. Form a ring with individual cinnamon rolls, arranging them into sun rays or daisy petals around the pan.
  5. Bake for 30 minutes.
  6. Remove from oven and rest in pan for 5 minutes. Flip onto a plate. Set aside for one hour to completely cool.

Ricotta Buttercream Frosting
  1. In a mixing bowl, add butter and ricotta cheese. Beat on high until fluffy.
  2. Add powdered sugar and mix on low. Mix in vanilla and orange zest.
  3. Set aside if making cake within the hour. Otherwise, cover and refrigerate for 3 days or freeze for up to 6 months.

Allow cinnamon roll ring to cool
Bringing it all together
  1. Carefully find a place to insert a plastic baby into one of the cinnamon rolls.
  2. Spread onto the cooled cinnamon roll ring. Top with colored sugar in banded sections, alternating each color around the top.
  3. Pull apart or slice.
  4. Whoever finds the baby has good luck for the next year. Enjoy!
