Kick off fall with our chili

Get ready for a change in season with our “Fall Food Friday” segment! Over the next few weeks, we are bringing you a few of our favorites. Our White Bean Chili with Pulled Chicken recipe brings comfort and mild heat from the Original RO*TEL Tomatoes. We love the pop of fresh tomatillos and the soup vibe this gives. Feel free to substitute the chicken with your protein of choice!

Serve this with a side of cornbread or tortilla chips. We doubt anyone will leave any of the broth behind! Our chili also goes great for larger crowds if you want it alongside sliders or hearty shared dishes.

Recipe
Ingredients
  • 2 T sunflower oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1-1/2 lb rotisserie chicken, pulled
  • 2 15 oz cans of chicken broth
  • 4 tomatillos, quartered
  • 12 oz can RO*TEL Original
  • 14.5 oz can diced tomatoes
  • 1 1/2 T chili powder
  • 1/2 t dried oregano
  • 1/4 t ground cumin
  • 2 15 oz cans of cannellini beans, drained and rinsed
  • Salt and pepper to taste
Tools
  • Dutch oven
  • Can opener
  • Chef’s knife
  • Cutting board
  • Ladle
Ingredients you will need; use your protein of choice
How to make it
  1. Heat a Dutch oven over medium heat.
  2. Add oil and cook onion and garlic until soft. Add chicken and cook with broth.
  3. Stir in tomatillos, tomatoes, Rotel, and spices. Bring to a boil and simmer for 20 minutes.
  4. Add beans; simmer for 5 minutes. Season with salt and pepper to taste.
  5. Enjoy!
