As we are about to turn the calendar page to November, we continue to enjoy the fall harvest. One of our favorite baked goods is muffins, and today, we have an easy three-ingredient recipe that David’s mom gave us.

Our pecan pumpkin muffins pair perfectly as an after-dinner treat or on their own with a hot cup of cider, chai, or coffee. We enjoy clean baking with Caraway bakeware, utensils, and cutting boards. You will need

  • 15 oz can pumpkin puree
  • 13.25 oz spice cake mix
  • 1/4 c chopped pecans

Instructions

  1. Preheat oven to 375 °F.
  2. In a mixing bowl, stir the pumpkin and cake mix until combined.
  3. Scoop 2 T batter into a lined muffin pan. Sprinkle pecans on top.
  4. Bake for 18 minutes or until a toothpick inserted in the center comes out clean. Remove from the pan immediately and place on a cooling rack.
  5. Makes 12.
  6. Enjoy!
