Exploring healthy comfort food
No way. We’re not making something with cauliflower to replace potatoes or rice. This was a common sentiment in our house not too long ago. However, this recipe changes everything. Finally we have found a way to ensure the cauliflower isn’t overly dry or bland. The texture of the mashed cauliflower here is beyond perfect. We have already said that this is a dish we’d make as a standalone, or for our future kids to fool them!
But all of that aside, this version of a low-carb shepherd’s pie is not only comforting, but also feels filling! We love the added pizazz of carrots and onions in the meat mixture, along with a good ole’ Worcestershire Sauce for good measure! Pretty sure it can’t be called shepherd’s pie without that signature ingredient.

You will need
- 2 lb. 85% lean organic ground beef
- 1/2 sweet onion, chopped
- 1/2 head of cauliflower, washed and chopped
- 2 carrots, washed, peeled and shredded
- 3 garlic cloves, minced and divided
- 2 T butter
- 1-1/2 T heavy cream
- 1-1/2 T water
- 1 T Worcestershire sauce
- 1 t salt
- 1 t pepper
- 1/3 cup cheddar cheese, shredded
- (Optional) Parsley, for garnish
- (Optional) Red pepper flakes, for spice
Instructions
- Preheat the oven to 350°F.
- Cover cauliflower and water in a glass bowl and microwave on high for 4 minutes. Drain water, and add butter. Transfer to a food processor, and add cream, 1-1/2 t minced garlic, 1/2 t salt and 1/4 t pepper. Mix on high to combine, scraping the sides every 15 seconds until smooth. Set aside.
- In a large skillet over medium heat, add 1-1/2 T butter. Brown ground beef for 8-10 minutes, and season with remaining salt and pepper. Remove from pan.
- Cook onions and carrots in pan juices for 4-5 minutes or until softened. Add remaining garlic and cook until fragrant. Add the cooked meat back in, and stir. Remove from heat.
- In a greased pie dish, spoon the meat mixture onto the bottom and press down. Spread the mashed cauliflower over the top, and sprinkle with cheese.
- Bake for 25 minutes, and broil for an additional 3 minutes until cheese is bubbly and golden.
- Sprinkle with parsley or red pepper flakes if desired. Serve and enjoy!
