Not another boring salad!
Who knew making salads at home could be so much fun? We appreciate elements of dressings that bring out the flavors in fresh produce, but also having a balanced meal within one bowl is an added bonus.
Feel free to get creative with proteins to mix in here. We prefer grilled or rotisserie chicken on ours, but can imagine some paneer or salmon being delicious as well. Most importantly, this is super easy and quick to make during busy days.
You will need
- 4-5 oz. spring mix, washed and dried
- 8 oz chicken, cooked and warm
- 1 apple, washed, cored and chopped
- 1 avocado (or two packages of Good Foods Avocado Mash)
- 1 c chow mein noodles
- 1/4 c carrot ginger dressing (we love this one from Acid League)
- 1 T sesame seeds
Instructions
- Toss lettuce with chicken, apple, avocado, noodles, and dressing in a large mixing bowl.
- Serve with a sprinkle of sesame seeds on each portion.
- Enjoy!
