Our journey with macro nutrients
As parenthood is soon upon us, cooking healthier and eating meals at home is more important than ever before. This recipe is quickly becoming a favorite we will have on rotation thanks to inspriation from MyFitnessPal. Asian flavors within this dish are delicious, with tangy spice in every bite!
Feel free to experiment with the quantity of sriracha depending on personal tolerance. We also think you can use different meats or plant-based substitutes to change it up without losing the core of this dish. All of these items can be found at the grocery store or through online delivery such as Instacart! One thing is sure, if you like balance without spending much time preparing meals, this will be one you keep on rotation, too!
You will need
- 3 T sesame oil
- 2 lb. 85% lean organic ground beef
- 3 cloves garlic, minced
- 16 oz. package coleslaw mix
- 1-1/2 T sriracha
- 3 T less-sodium soy sauce
- 1-1/2 t rice vinegar
- 1 green onion, washed and chopped
- 1-1/2 t sesame seeds
- 1/2 t black pepper
- 1/4 t salt
- 2 c jasmine rice, cooked
Instructions
- Over medium heat, add oil to large skillet. Next add the beef and cook until browned, about 8-10 minutes.
- Stir occasionally. Add garlic and cook until fragrant, about 1 minute.
- Add slaw, sriracha, soy sauce, vinegar, salt, and pepper. Cook until slaw is softened, stirring occasionally, about 5-7 minutes.
- Serve over cooked rice. Top with an extra drizzle of sriracha, green onions and sesame seeds, if desired.
- Enjoy, and package remaining portions of beef slaw & rice in glass containers for easy meals through the week. We prefer having ours with a root vegetable on the side, such as baked honey-glazed carrots!
