Spaghetti doesn’t just pair with marinara sauce
When you think about spaghetti, have you ever thought to pair it with Asian flavors? On our journey to explore dishes outside our usual rotation of recipes, we found inspiration in California Pizza Kitchen’s (CPK’s) Kung Pao Spaghetti! Our version builds upon this, and we aren’t the biggest fans of scallions as they often overpower the other flavors. The spice and tang within this sauce kept us wanting more of the noodles, where we started wondering what else we can add next time!
While our recipe below uses bell peppers, get creative and also throw in some snow peas, julienned carrots, scallions if you desire, as well as fresh sprouts to garnish! Proteins of choice can also be used, and we think shrimp, steak and tofu would be great as well! Enjoy the easy-to-make nature of this weeknight dinner option that will leave you with a few leftovers to keep you running throughout your day.
You will need
- 16 oz.package spaghetti pasta noodles
- 2 lb organic, cage-free chicken breast, cut into 1” cubes
- 2 bell peppers, rinsed and chopped
- 6 garlic cloves, minced
- 1 c chicken broth
- 1 c roasted peanuts, chopped
- 2/3 c soy sauce
- 1/2 c sweet chili sauce
- 1/4 c sriracha sauce
- 1/4 c rice vinegar
- 1/4 c cornstarch
- 1/4 c vegetable oil
- Salt and pepper
- Optional: Chives
- Optional: Sesame seeds
Instructions
- Bring large pot to a boil. Make pasta according to package instructions.
- Heat oil in a large skillet over medium-high heat. Add chicken breast and season with salt and pepper. Turn occasionally until cooked and browned, approximately 10-15 minutes. Remove chicken from pan and place into a bowl. Set aside.
- Add garlic to the skillet and cook until fragrant, approximately 1 minute. Add cornstarch (pro tip: mix with cold water before pouring into pan to make it easier to dissolve), soy sauce, sweet chili sauce, sriracha, and vinegar. Stir until combined and add peppers. Reduce liquid if needed. Fold in the pasta, and half the peanuts.
- Serve the noodles with chicken in each dish. Top with chives, sesame seeds, and additional peanuts, if desired.
