Our limeade punch with a ring of frozen sorbet molded in a bundt pan was a crowd favorite at our recent baby shower. We wanted to showcase our new Hatch Faceted Glass Punch Bowl (that we found at Crate & Barrel) and also provide a drink option everyone would enjoy!
Our punch recipe is below and combines the zest of citrus that is refreshing, along with a little creamy finish when the sorbet begins to melt and mix in. Since we’re having a boy, we wanted to incorporate a little something blue, so we floated blueberries in addition to adding them into our bundt pan for the sorbet, too!
If you make this, please let us know. We’d love to hear your thoughts.
You will need
- 1 T sunflower oil
- 3, pints of lemon sorbet
- 2, 12 oz. cans frozen limeade juice concentrate
- 1 quart (32 oz) cold water
- 2, 2 L bottles of lemon lime soda
- Fresh limes, sliced
- Frozen blueberries for garnish
Instructions
- Begin making this at least the night before your event.
- Pour sunflower oil into bundt pan and wipe with a paper towel, getting into the creases of the pan. Chill in the freezer for 30 minutes.
- Thaw sorbet until soft (about 20 minutes at room temperature). Put a layer of blueberries and lime slices in bottom of bundt pan. Spread the thawed sorbet into the pan with a silicone spatula until level. Cover with plastic wrap or foil.
- Freeze for at least 12 hours. Over 24 hours is ideal.
- Make the drink in the punch bowl an hour before your event begins, thawing the frozen limeade juice concentrate on the counter for 20 minutes at room temperature. Then add in the cold water, and lemon lime soda.
- Remove the bundt pan from the freezer. Run cold water on the bottom of the pan for 30 seconds. Flip upside down onto a piece of parchment paper. Tap a few times and the sorbet ring will release. Transfer to the punch bowl.
- Serve with a ladle and offer guests mix-ins if you’d like.
- Enjoy!
