Beef and Cheese Enchiladas
One of our favorite monthly meal rotations since we started dating and cooking together is David’s Beef and Cheese Enchiladas. Early on, when Edward first had them, he jokingly called them “Gringo Enchiladas!”
You will need
- 1 T butter
- 1 lb ground beef
- 1 yellow onion, chopped
- 3 T taco seasoning
- 2/3 c water
- 1/2 lb shredded cheddar cheese
- 8-10 fajita tortillas
- 1 can red enchilada sauce
Instructions
- Preheat oven to 375° F.
- On medium heat, melt butter and sauté onion until soft and translucent. Add ground beef and brown. Drain and return to pan.
- Add taco seasoning and water. Simmer for 5 minutes on low. Remove from heat.
- Sprinkle a pinch of cheese on each tortilla. Add a spoonful of ground beef. Roll tightly.
- Place rolled tortilla into greased 9×13 baking dish. Repeat steps 4 & 5 until the dish is filled.
- Pour red sauce over the tortillas along with the remaining shredded cheese.
- Bake for 20 minutes.
- Enjoy with rice and beans!
