It's grilling season
Kebabs are an easy meal for entertaining in the spring, especially if you need to swap your protein for vegetarian accommodations!
We’re big fans of making social gatherings a team effort by collaborating on a menu and defining who brings what to maximize our time together!
There is something gratifying about using freshly chopped ingredients with marinated protein to assemble kebabs to slap onto a grill on a warm sunny day!
You will need
- 1 ½ pounds boneless skinless chicken thighs
- 1 package of bacon
- 2 zucchini
- 1 package of mini sweet peppers
- ½ red onion
- 2 Tablespoons Italian salad dressing
- 1 teaspoon Cajun seasoning
- Kosher salt
- 6-8 wooden skewers soaked in water
Instructions
- Pat dry the chicken and cut it into 1-inch pieces—season with salt and pepper.
- Whisk Italian salad dressing and Cajun seasoning in a large bowl.
- Slice vegetables into 1” pieces, put into the bowl with chicken, and stir to coat. Set aside for 20 minutes to marinade.
- Preheat the grill to high heat, and brush clean.
- Alternate placing chicken, bacon, and vegetables onto skewers, spacing each piece about ¼-inch from the next.
- Lower grill heat to medium-high heat, and cook kebabs for 6-8 minutes per side or until chicken reaches an internal temperature of 165°F.
