You will need
- 2 lb bulk hot Italian sausage
- 1 c heavy cream
- 1/2 c shaved parmesan, with extra for garnish
- 3/4 c vodka
- 1 yellow onion, chopped.
- 4 garlic cloves, minced
- 14.5 oz can fire roasted tomatoes
- 6 oz can tomato paste
- 1 package penne pasta
Instructions
- Over medium heat, brown the sausage in a dutch oven. Drain, remove, and set aside.
- Fill a large stock pot with water, boil water. Cook pasta according to package directions. Reserve 1 cup of the pasta water before draining.
- Add butter to the dutch oven, and cook onions until tender. Add garlic and cook for one minute. Add tomato paste, stir and cook for another minute. Pour in tomatoes. Combine with cooked sausage.
- Add heavy cream, vodka and pasta water. Reduce heat to low, and simmer until sauce becomes thick, 10-15 minutes.
- Combine meat sauce, pasta, and then fold in the cheese.
