Apple Cinnamon Oat Pancakes

We always buy honeycrisp or gala apples with a plan to snack on them by themselves for the health benefits they bring. But then the weekend hits and here we are looking at the apples on the counter that we didn't eat during the week. What to do? Make pancakes of course!
In all seriousness, our pancake recipe below can be made with intention as they are a bit more balanced than some. We use a mix from Kodiak Cakes, giving us a few more grams of protein per serving. And of course rolled oats, too. There are health benefits in cinnamon, too!
So again, we won't call our pancakes healthy (we're not dieticians), we find them to be a little lighter in calories (and with fewer grams of sugar) than flapjacks we've indulged in the past!
You will need
- 1-1/2 c pancake mix
- 1/2 c old fashioned rolled oats
- 2 medium red apples, chopped with a squeeze of lemon juice to prevent browning
- 2 large eggs
- 1-1/2 c milk
- 1 t cinnamon
- 2 T butter
Instructions
- In a large bowl, bring together all ingredients (besides the butter). Stir until just combined.
- Over medium heat, melt butter on a griddle or 12" skillet.
- Pour batter onto pan in 2/3 c increments.
- Using the around the world method (take your spatula or flipper around the edges of each pancake), flip after cooking 2-3 minutes. Cook another 2-3 minutes until brown.
- Remove pancakes to plate, and repeat steps 3 and 4 with the remaining batter.
- Serve with a dusting of powdered sugar and maple syrup if desired. Enjoy!
