Translated, pico de gallo means “rooster’s beak”. Why would we use this for one of the best salsas in Mexican cuisine? Many say that the origin is because the way in which people pecked at this when enjoying it, with their thumb and forefinger, resembling a rooster’s beak. Others say it might be because some varieties call for using serrano peppers, which are shaped in a way that resembles a rooster’s beak. No matter how you look at it, pico de gallo is a classic that we desire to keep on hand at all times in our home!
Our recipe is easy and doesn’t take long to make. Allowing the lime juice to marinate over the tomatoes, onion, pepper and cilantro while making the rest of the meal unifies the flavors together. Make this ahead, store in an airtight container, like these Rubbermaid Brilliance Food Storage Containers, and refrigerate for up to 5 days. What will you add yours to?
You will need
- 3 roma tomatoes
- 1 jalepeno
- 1/2 white onion
- 1/2 bunch cilantro
- 2 T lime juice
- Salt and pepper
Instructions
- Rinse and finely chop fresh produce.
- Combine in a medium bowl. Pour in lime juice.
- Season with salt and pepper to taste.
- Serve with chips or as an addition to entrees.
- Enjoy!
