Treat Yourself to Weekend Brunch
Our neighbors recently brought us a home-cooked meal and a fresh loaf of Italian Scaletta Bread after we brought our baby home. One of the best things to do with leftover day-old bread is to make French Toast!
Honestly, is there anything better than a morning at home, leisurely being able to enjoy a cup of coffee or tea, while making breakfast? It’s one of our favorite things. Talk about the day ahead, reflect on the week’s events, or reminisce about the best times.
This recipe serves 4, with two slices per person. Any day-old bread will do, from challah, sourdough, multigrain, to Italian, and of course, French! Be sure to save this page, and send it along to family and friends, too!
You will need
- Half a loaf of day-old bread
- 2 T butter
- 4 large eggs
- 2/3 cup milk
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Instructions
- Use a serrated knife to cut bread into 6-8, 1” thick slices.
- In a blender, add eggs, milk, flour, sugar, salt, cinnamon, and vanilla. Blend for 30 seconds on high.
- Pour mixture into an 8” x 8” square pan. Soak each piece for 1 minute per side, then flip, and repeat the soak on the opposite side.
- Over medium heat, melt butter in a large skillet or griddle. Cook each piece of bread until golden brown, 3 minutes per side. It will self-release when ready to turn over.
- Serve warm, dusted with powdered sugar, with maple syrup.
